My joystick sounds dry and not as responsive! Would sewing machine oil
or something else be safe enough to lubricate this with no damage?

I wouldn't trust something petroleum-based like machine oil -- it might eat
the plastic. One thing you could try is pure silicone grease (the stuff at
hardware stores typically contains petroleum-derived lubricants). You
should be able to find it at a dive shop, or online at www.tryphon.it
(they're actually located in Florida).

If you are careful not to spread it on anything else, graphite would
work.

Or some teflon paste..

You can also find silicone grease at swimming pool supply stores. It's
waterproof properties make it ideal for lubricating "O"rings, valves, etc.

Best regards,

Change is inevitable,
except from vending machines!
