Fireworks CS3 question:
Photoshop lets you convert an image from RGB to CMYK to etc... Can you
do that in FW?

Fw only outputs RGB color modal.
You can incorporate CMYK color specs by using the Color Mixer Panel, but even then, accurate output will still need to be managed by Photoshop or Illustrator.
