There is a real big price difference between the M300 and the older M30.

I don't know about those specific keyboards, but, as for the question in the
subject regarding aftertouch, I don't use it much, but, it is indispensible
with some sounds/instruments I use frequently, like some of the guitar
samples with Cakewalk's Dimension and a number of the Garritan libraries. I
have two keyboards I use as MIDI controllers. One that is more of a
piano-like thing (Roland Rhodes MK-80), with no aftertouch, and then another
that is more of a synth thing (Alesis QuadraSynth Plus Piano), which does
have aftertouch. I don't think I'd want to be without at least one keyboard
that had aftertouch at this point.

I only use aftertouch when both of my hands are already engaged inaction and
my other digits can't do the job.

I've used it in the past, I'm exactly sure what all it implicates, I
just know a struck chord is allowed to finish? or am I thinking
"effect tails"

The difference would be... upon exporting a grand mix, you actually
hear the last chord or lick fade oppossed to an abrupt stop.

What you're describing sounds a bit more like effect tails. I usually just
select past the end of the MIDI sequence by a few measures (or maybe even
longer) when exporting, to allow any synth releases and/or effect tails
(especially long reverbs) to ring out. Otherwise SONAR has no way of
knowing how long a MIDI sound or effect tail will be. Even when you use
SONAR's effects tails flag, it only sets it for a predetermined number or
seconds, which may or may not be long enough for your particular synth
release/reverb tails. (Of course, if you set it long enough to cover any
bases you'd ever encounter, it will be long enough -- I think the default is
either 5 or 10 seconds.)

What aftertouch does is completely dependent on the programming for the MIDI
sound you're using. For example, with the Dimension guitar patches I
mentioned in my post, it tends to do a little pitch bend/vibrato-type thing
which feels like what you might get if a guitar player moved his fingers
around a bit while holding the strings down. For Garritan Stradivari, I
believe it controlled vibrato depth while mod wheel controlled vibrato
speed, though I may have those reversed. It definitely controls vibrato
depth with Garritan Jazz & Big Band -- another controller (CC17, I think --
definitely not mod wheel, which controls volume) is used for vibrato
speed -- and I think the same is true for Garritan Personal Orchestra.
