You cannot open .pdf files using OOo. Adobe is the most common
software for opening pdf's.

You should be able to open .odt using OOo as well as .doc formatted
files. Are you saying that when you try to open an .odt file using
OpenOffice it is all scrambled?

Make sure of the filetype when saving and select the box labelled
"Automatic file name extension".

If the problem persists, there may be something wrong with your "user"
folder.
