Does the new video iPod just play quicktime, or avis, mpegs, etc, too?
I'm keen to get one, but if it's Quicktime only, it's basically
useless, as I could care less about music video downloads.

Its a bit picky about H.264 at the moment. Only QuickTime Pro 7.0.3 and
iMovieHD can encode correctly for it.
Most other encoders (e.g Handbrake, ffMpegX, Toast7) are OK with the MPEG4
files they create.
