The data in my Access database is in the order that I want it to be
but my Pivot Table insists on sorting it either Ascending or
Descending. I can't seem to turn this off...

If I right-click on the field name and choose Sort > More Sort
Options... > Manual (you can drag items to rearrange them) This
makes no difference!

If I choose PivotTable Options > Display > Field List: Sort in data
source order This again makes no difference!

Is there some trick I'm missing or is it simply impossible to preserve
the original data source order?

Br, Nick.
