That looks pretty good - like eudora, or as they say nowadays, nothing
like eudora!

I am happy with mail on the mac but still use eudora on the PC, so was
quite suprised when I installed eudora 8 and notice that.. well, it was
nothing like eudora, and everything like thunderbird, which I dislike
greatly (on any platform).

Will it be able to produce copies of sent mail in a format that's easily
readable by other email clients (i.e. html or pain text)? Would have thought
that's a given for any IMAP client and the one thing that stopped me from
using Eudora.

Too early to say yet. Suggest you join their forums and suggest what you
want. At this point, we are at Odysseus 0.5, and it can't do much more
than set up accounts, send/receive mail, and move mail to other
mailboxes.

A release date of 12th May for 1.0 seems optimistic to me.

That's terrific news: I hate the feature bloat and slowness of other
mail clients. I want an email-client that's small (as in doesn't eat
up my screen), fast and out-of-my-face and despite some irritations,
Eudora fits the bill. I was truly underwhelmed with the Eudora 8
betas; this one looks much better.
