Is there an app which allows you to use your Mac to mimic / replace a TV
remote control? Version Tracker reveals lots of remote control products
but as far as I can see they are all designed to allow you to remote
control your Mac, not to use the Mac to control another device.

Any help will be gratefully received.

Huh? Why not just go to any electronics store and buy a remote control
for $5?

Well, yes, good point. Perhaps a more detailed explanation of the
problem may help explain why.

I have a Sony TV which has a Memory Stick slot, it is capable of showing
images on such a memory stick on the TV screen. In order to activate /
use the functionality you have to press the button on the remote marked
Memory Stick. The remote I have (which came with the TV) does not have
a button marked Memory Stick. The button which is in the right place
according to the manual is actually power Saving.

I have asked Sony for assistance of course, but while I wait for their
reply I am looking for other alternatives and one possibility is to find
a program which uses the flexibility of the computer to drive its IR
port with the appropriate codes - always assumiing I can find out what
those are! It may not be the best solution but if it's quick, simple,
and cheap ...
