I have no experience with Leopard yet, but can somebody tell me whether
Leopard's Mail allows you to unsubscribe from unwanted folders on an
Exchange (IMAP) mail server?

Sort of. Apple really don't understand folder subscriptions. The only
folders you can (un)subscribe to are those which are shared or public.
It ignores subscriptions on your own folders.
