Does Windows Mobile software store a log of sms's received and sent?
eg. not the message itself but the details of the time and date and
sender number? My old Nokia has this under log/message recipients.

Not out of the box, there are some applications that alow you to back up
your SMS messages to Outlook:

Yes, it does - if you export / backup your messages with, say, Jeyo Mobile
Companion or the free (!) SMS Backup, you'll see these headers.
