I open an exisiting spreadsheet, and it's maximized in the Excel window.
When I minimize the spreadsheet (within teh Excel Window), it is no longer
visible, although it's there: if i select Full Screen from teh View menu, I
can see the file. If I close Full Screen view or select another view, I can
no longer see it.

I've had this installation of Excel for several months, and it's worked fine
until now

Make sure it is the only one open, then in (XL2003 or earlier) select
WINDOW>ARRANGE...>Tiled and hit OK.
Now save.
Sorry I don't have XL2007, but on the ribbon there will be some item which
will trigger the Arrange Windows dialog.
Paul
