In your version of whatever cakewalk program you use, is there a way to
start recording when a midi keyboard key is struck, instead of going by
the metronome?

Yes, in every manual for every version. Have you ever looked at the manual?
Look at Key binding, for one.

I use key binding but I'd like to be able to trigger the recording by
playing a regular note. My Yamaha synth just sits there until I play a
key and then records. I know it's kind of petty but if there is such a
thing in Cakewalk, I'd like to know. There is no way to adjust the
tempo of feedback by just tapping some button in real time, is there?
Am I spoiled or what?

I meant playback, not feedback. Sorry
