I have my original table which is a 1 x 1 table which is 748 x 190 in size.
Within that table I have a 1 x 2 column table where in the left column I would
like to put our company logo and in the right column just a bunch of text, but
when I put the info in each cell and preview the page, everything aligns to the
left?

How do I align it the way that I want?

For what you're doing, I would forget about tables as a layout method - it's a
bad idea. I would consider learning HTML and CSS and then using DIVs. But for
sake of conversation, the default align in tables is left - the easiest way
change your alignment (horiztonal and vertical) is in the Property Inspector.
