Why does Outlook 2003 create an automatic gif file of the entire outgoing

That is not standard behavior. I'd like to see this GIF file.

Please post a screenshot illustrating this behavior. You will probably
want to post it on the web and link to it.

On the other hand, you can be referring to an automatic HTML copy
attached to a plain text message. In that case, set your Outlook to send
plain text mail and see if this reoccurs.
