Everytime you "close" outlook (as when an update happens), all the floders
which are "open" close down so they must manually be repoened. There must be
a way to keep them open - as with a large list of folders this is a 5 to 10
minute ordeal.

No, there is no way to force outlook to keep the folders open. Some versions
of outlook will open the folders as rules move new mail into them - that is
the only way to automatically open them.
