I can't seem to add TO as a field and I only see FROM and that is no help for
Sent Items.

Right-click on the header row, select Field Chooser, and add whatever
columns you want. You can also drag them into whatever position you want,
too.

You need to reset the view. Right click on the row of field names and choose
Customize.. then Reset.
