I haven't had the problem with the only being able to create custom data
sources, however I have 2 domains, and am using 2 custom sources anyway. I
just created 2 custom connections, one to each domain.

As for the profile property import mapping, I had this problem. The solution
I found was to the following:
on the "Configure Profile Import" page, under the "Default Access Account"
section, specify the same account that is used as the application pool
identity of your shared service provider.

I was unable to map properties when "Use default content Access Account" was
selected.

Hope this is helpful, as it took me ages to sort this out...
