Call me crazy, but since getting my 64 about a week ago, I wanted to

Actually, one thing that I've thought about doing is running a BBS in
something like VICE - how doable is this?

It's doable. Until recently, Miami Vice was running in VICE. Also, The
Fourth Dimension. I have run BBSs in VICE for testing and development
purposes.
