Same issue here. It's clear that Dreamweaver CS3 performance is broken on OS X.

Thats to bad! I use the "rosetta" method and it works a bit better but not as it should be!

In this thread many had problems with CS3 products crashing, but there was
also talk about various ones being slow like you mentioned.
Look through here and see if one of the solutions mentioned, helps.
After trying a few of them, one finally helped me with mine. I had to replace
the runtime dlls. The download link is in the thread in one of my posts and
someone else's if you want it.
