My Office 2003 became corrupted and I uninstalled it without backing up the
Outlook PST file. The file is no longer in the App Data/Microsoft/Outook
folder and the simple apps for recovering deleted files doesn't find a PST
file.

The PST is normally located in a hidden file. Use your file/folder search
function to locate the PST file. Click on the Advanced button to include
searching hidden files/folders.

Office 2003 doesn't normally "corrupt." If there are issues here and there,
normally they're relatively easy to resolve. What exactly happened?

Uninstalling outlook doesnt impact on the data file, just as uninstalling
Word doesnt remove your docs.
Niether does outlook become corrupt, unless your drive is faulty.
Uninstalling/Reinstalling rarely cures anything

Uninstalling Outlook won't touch the PST file. You may looking in the wrong
folder, too. The default folder is %UserProfile%\Local Settings\Application
Data\Microsoft\Outlook for WIndows 2000 or XP and
%LocalAppData%\Microsoft\Outlook for Windows Vista or 7.
