On occasion it is handy to be able to add a memo to a received email just to
update any changes which were agreed to through another medium such as
telephone or face to face. Is this possible or does one need to forward the
email to oneself with the notes added in? Using Outlook 2003.

You could open the email, click Edit/Edit Message (or similar), and write
the note into the body of the email.
