I have an excel spread sheet which includes a graph I made from the
spreadsheet. I would like to copy both to a word document but I don't want
any reference to the formulas or vlaues.

If I understand you correctly, in Word, use the Paste Special option and
paste it as "Picture (Windows Metafile)"
