How can I schedule automatic payment of a mortgage that I hold (that
is, I have loaned this money) so that it records the interest and
principal? I'd like to have it recorded in advance so that I can
prevent the downloaded transaction.

Use the Quicken loan wizard to setup the loan, with you as the lender.
The loan wizard allows you to choose a scheduled transaction (which
includes the possibility to automatically enter the payment), or a
Memorized Payee (transaction).

[You need to include your Quicken year/version/release when you post
questions.]
