Do not delete the Guest account. Disable it instead. The Guest account
should not be used as a regular account.

Create an account for your daughter. Because you have XP Pro, you can
set group policies to limit her account with the Group Policy Editor.
Start>Run>gpedit.msc [enter]

Be very careful using the Editor since it is completely possible to lock
*yourself* out. For questions about Group Policy, post in the newsgroup
for it: microsoft.public.windows.group_policy

A simpler way might be to use the MS Shared Computer Toolkit:
