In OL2003, go to Tools -> Send and Receive -> Send and Receive Settings -> Define Send and Receive Groups, pick the group(s) that contain your accounts, Edit the group, and pick the account(s) to decide if they are included in a mail poll (and, if included, you can separately select if they send, receive, or both).
