WINS works fine on both domains, and when I ran the 2008 wizard to create
the trust, it said it was working for both directions.

I'm not worried about it, because I really only need it to work for 2008
domain members to get to the 2000 domain until it goes away.

Ok, no problem, then. But I would be curious to get that working, you know, more out of a curiosity as to why it's not working in one direction. But if you don't need it, that's cool, too.
