Theory has it (and it is only theory), the bulls are so hyper with
rage, adrenalin and homicidal instinct it does not register the pain.
The bleeding does, however, weaken it considerably and (still enraged)
gets to the point of exhaustion, the adrenalin still acting as an
anesthetic.

In the one bullfight I attended, a bull got one of his horns knocked off. He
was in such pain thereafter that he just staggered around and refused to
fight. They had to bring a replacement bull into the ring.

Use of the word "fight" is a bit silly in this context anyway. The bulls I saw
acted like they'd much rather be somewhere else. They ran around to escape the
picadores, but more often in the direction of the exit than of the matador.
The matador usually had to position himself in the bull's way to get him to
run by.
